Peter has a BSc Hons and MSc in Chemical Engineering. He is a Chartered Scientist, Fellow of the Institute of Food Science & Technology (UK) and Member of the Institute of Food Technologists (USA). He joined the University in 1987 from Tate & Lyle Group R & D in Reading, where he conducted research and development on aspects of the sugar refining process. He teaches at undergraduate level in the areas of food safety management, product development and enterprise. He has particular interests in facilitating food innovation, and in this regard he has worked on numerous collaborative projects with industry. He is currently working with ABC Nutrition (sports nutrition and meal replacement products), Clonarn Clover (free range eggs), PharmaFlow (natural products) and PLC Ingredients (dairy products). He is also a praticipant in an EU SME "Hydrocolloid derivatives as functional food ingredients" project with the University of Reading, CyberColloids, Marigot, Hebridean Seaweeds and Roko. He is the Co-ordinator of Academic Enterprise in the Faculty of Life and Health Sciences which involves him in advising researchers in the exploitation of their science.
