DOF 2015 - 6th International Symposium on Delivery of Functionality in Complex Food Systems

The first DOF symposium was organized in Lausanne, Switzerland in 2005 and its following bi-annual series brought together leaders from academia, industry and young researchers.  They discussed and debated the latest scientific and technological developments of food structures at the nano- and micro-scale as tools to manage and optimize the delivery of functionality to the body.

DOF2015 will be again a relevant platform for these developments and applications to food engineering, food consumption and diet, considering in depth important topics such as:

  • Structure engineering of food system
  • Binding & release of bioactive compounds
  • Investigation of nano/microstructures in bulk & surfaces
  • Oral processing & Sensory Analysis
  • Behaviour in the gastrointestinal track & nutritional properties
  • Emergent phenomena in foods
  • Application of complexity theory to foods, food consumption and diet

Invited talks will be presented by worldwide experts of hot topics and latest research findings will be presented in short talks and poster communications selected from submitted abstracts.
In addition, an exhibition of analytical equipments and software will allow learning of the latest trends and newest products in the field of delivery of functionality in food systems. It will be held in the area of poster presentation and coffee breaks in order to facilitate discussion and exchanges between the participants.
